Beef Liver and Onions




*Ingredients:

° 1⁄4 cup flour
° 1⁄2 teaspoon of salt
° 1⁄8 teaspoon of pepper
° 1 lb beef liver
° 1⁄4-1⁄2 cup of butter
° oil, to taste
° 2 c finely chopped onions
 ° 1-2 tsp fresh sage, chopped
° 1⁄2 c beef broth
° 1⁄4 c white wine
° 1 t Italian parsley

*Instructions

 Mixing flour, salt & pepper in a bag.
Sliced liver to 1/2 inch strips also shake in a bag of season to coat. Put apart.Heat fry pan with 2-3 tsp of butter & a drizzle of oil.
Frying onions on heat to soft and shiny.
 Transfering to a side plate &; sprinkling with sage, salt / pepper.
 Returning pan to high heat, add 3-4 tsp of butter & a drizzle of oil.
 Adding liver & sear for 5 min to golden brown.
 The inside of meat should be pink.
 Returning onions to pan to heated through.
 Removing liver and onions from pan also plate.
 Using stock and wine to deglaze pan & reduce liquid to you have a thick sauce.
 Pour on liver and onions, sprinkling with parsley & serve.
