Steak Quesadillas!!



*Ingredients

°1 C. tbsp (15mL) GAY LEA
°1 cup (250mL) onion, finely chopped
°1 cup (250mL) red bell pepper, finely chopped
°1 cup (250mL) green bell pepper, finely chopped
°1/2 tsp. 1/2 tsp (2mL) salt
°1/2 tsp. 1/2 tsp pepper
°2 lb steak, grilling such as eye around, cut to 1/4" (5mm) cubes
°1 C. 2 tbsp (15mL) cornstarch
°1/3 cup (75mL) beef broth, sodium-reduced
°4 flour tortillas, large
°2 tbsp. 1/2 tsp  sauce
°2 cups (500mL) IVANHOE - Cheddar Horseradish, grated
°1 container GAY LEA - Sour cream - Fat free, for dipping

Melt the butter over medium heat in a large nonstick skillet. Add onion, green and red peppers and half the amount of salt and pepper. Cook, stirring frequently, for 5 minutes or until tender.
Meantime, toss beef with cornstarch & rest salt and pepper. Add to skillet and sauté for 1 minute or until beef is browned. Pour in the beef broth and Worcestershire sauce. Cook for 3 minutes or until sauce has thickened; remove from fire.
Sprinkle each tortilla evenly with cheese. Spoon equal amount of beef mixture onto half of each tortilla; fold tortillas to contain filling. Clean the pan and return to the heat. In batch, heat the quesadillas for 2 to 3 minutes on each side or until they are toasted and the cheese has melted. Serve with sour cream as a dipping sauce.
